I've been cooking in the West Country for over 20 years now and like most chefs as I have gone on that journey my food has changed hugely. Less complicated, driven more by my appetite and food we all love to eat. The big thing that hasnt changed though is my love of bold flavours, something that might look relatively simple on the plate but really packs a punch.
